Quick, Easy, Healthy, and Delicious…          Yes, Please!

If you are looking for the perfect Asian-inspired weeknight meal, this is the one for you. The inspiration for this Chicken and Noodles with Peanut Sauce recipe came from back when we had both our children living at home. Our evenings revolved around soccer, lacrosse, and basketball practices. These busy nights made coming up with healthy, quick, easy, and delicious meals tricky. However, it became my mission to create recipes that could check all the boxes and this one does just that.

Of course, if you have any experience in feeding a busy family dinner, you know that keeping food warm is always another challenge. That’s another reason why I love this recipe! You don’t need to worry about keeping this dish warm. Whether it’s eaten warm or at room temperature, it’s still outstanding. This recipe is sure to become a family favorite. 

Ingredients in Chicken and Noodles with Peanut Sauce

Simple and fresh ingredients are my favorite. This recipe is the perfect example of combining those ingredients and creating a beautifully balanced dish in flavor and texture.  Also, any recipe that uses a rotisserie chicken cheat to save time, is always good in my book!

  • Chicken broth
  • Peanut butter (I use crunchy, but you can use creamy if you prefer it.)
  • Fresh ginger
  • Low-sodium soy sauce
  • Honey
  • Crushed red pepper flakes
  • Garlic cloves
  • Carrot
  • Rotisserie chicken
  • Spaghetti
  • Green onions
  • Unsalted dry-roasted peanuts
  • Fresh cilantro

How to Make Chicken and Noodles with Peanut Sauce

First, combine chicken broth, peanut butter, ginger, soy sauce, honey, red pepper flakes, and garlic in a medium bowl and whisk until smooth.

Next, bring a pot of salted water to a boil on the stove. Cook the spaghetti according to the package directions. The pasta should be aldente. Drain the pasta and transfer it to a large bowl.

Then add the carrots, peanut sauce, and chicken to the spaghetti and toss all the ingredients to coat thoroughly.

Finally, sprinkle each bowl with green onions and chopped peanuts before serving. Garnish each serving with chopped fresh cilantro and enjoy.

Ingredients

  • 2/3 cup chicken broth
  • 2/3 cup chunky peanut butter
  • 1 tablespoon peeled fresh ginger, grated
  • 2 tablespoons low-sodium soy sauce
  • 4 tablespoons honey
  • 2-4 teaspoons crushed red pepper flakes
  • 2 garlic cloves, minced
  • 1 cup carrot sticks
  • Rotisserie chicken, shredded
  • 12 ounces uncooked spaghetti
  • 6-8 green onions, sliced
  • 6 tablespoons unsalted dry-roasted peanuts, chopped
  • Fresh cilantro, chopped (Garnish)

Instructions

    1. In a medium bowl, combine chicken broth, peanut butter, ginger, soy sauce, honey, red pepper flakes, and garlic; stir with a whisk until smooth.
    2. Bring a pot of salted water to a boil on the stove. Cook the spaghetti according to the package directions. The pasta should be aldente. Drain the pasta and then transfer it to a large bowl.
    3. Add the carrots, peanut sauce, and chicken to the spaghetti; toss to coat thoroughly.
    4. Before serving, sprinkle each bowl with green onions and peanuts and garnish with chopped fresh cilantro. *

Notes

* Can be served hot or room temperature.
