Today, I am sharing one of my favorite summer salads, Grilled Corn Summer Salad with Pickled Blueberries. I created this salad around my love for grilled corn. The first time I tried grilled corn, I was hooked! The char from the barbecue grill and caramelization that occurs when grilling corn makes it irresistible and incredibly delicious.

With its fresh ingredients and easy assembly, this Grilled Corn Summer Salad with Pickled Blueberries is the perfect side dish for any barbecue meal. On the farm, we especially love it with burgers, grilled chicken or mouthwatering chicken smash burgers, and BBQ ribs. You can even serve it with corn chips as an appetizer!
Fresh Flavors of Summer
Summer is the season of freshness. Delicious fruits and vegetables are in abundance. When it comes to the bounty of summer, I am all about diving in and enjoying it as much as I can before it’s gone.
I tend to create the most recipes in the summer months because, in my opinion, summertime is when farm-to-table eating is at its best. It’s one of my favorite things about the season.
On many summer mornings, I love to get out before the day heats up and head to the farmer’s market, basket in hand. I am always in awe of the beautiful selection so many local farmers have to offer. I take great care in choosing perfectly ripe heirloom tomatoes, fresh butter beans, ears of corn, sweet blueberries, and juicy watermelon and peaches. It’s hard to resist the bounty of summer.

Grilled Corn Summer Salad with Pickled Blueberries
Looking for the perfect summer salad? Look no further! This Grilled Corn Summer Salad with Pickled Blueberries is the perfect side dish for any barbecue. The fresh ingredients, easy assembly, and delicous taste make for a true crowd pleaser. Serve it along side burgers, grilled chicken, ribs, or with corn chips as a salsa. It's sure to be a hit!
Ingredients
- 8-10 ears of fresh corn (husks and silk removed)
- 1/2 cup pickled blueberries (See 'Notes' for recipe link.)
- 1/2 red bell pepper (diced)
- 4 green onions (sliced)
- 2 jalapeño peppers (minced)
- 4 tablespoons fresh parsley
- 1/4 cup extra-virgin olive oil
- 1 tablespoon minced garlic
- 1 lime (juiced)
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat grill to medium.
- Lightly wrap corn in aluminium foil. Arrange the corn on the grill and cook, turning frequently, until the corn is slightly charred, about 12-15 minutes.
- Remove the corn from the grill to a cutng board and let cool. Cut the kernels from the cobs and transfer to a serving bowl.
- Add all the remaining ingredients and toss to combine.
