I fell in love with this recipe last year when I made it for the first time for St. Patrick’s Day. After seeing how much people loved them, I have been anxiously waiting for the arrival of Valentine’s Day to make a special version for the holiday. Sweet Valentine shortbread bites are a wonderful way to say, “I love you.”

What You Need to Make Sweet Valentine Shortbread Bites

This is another one of those recipes with just a few simple and easy-to-find ingredients. When they all come together they make a mouthwatering sweet treat for Valentine’s Day.

The ingredients needed to make sweet Valentine shortbread bites including flour, sugar, butter, vanilla, and sprinkles.

  • Butter
  • Salt
  • Sugar
  • Almond extract
  • Vanilla extract
  • All-purpose flour
  • Red food coloring (optional)
  • Valentine’s Day nonpareils (typically red, pink, and white)
  • Parchment paper

How to Make Sweet Valentine Shortbread Bites

First, preheat the oven to 325 degrees. Line an 8-inch square baking pan with parchment paper, leaving a 1-inch overhang, and set aside.

Next, combine the butter, almond extract, vanilla extract, and food coloring in a bowl. (I only use one to two drops of red food coloring.) Beat at medium speed with a hand mixer, scraping the bowl often, until creamy. Reduce speed to low; add the flour, sugar, and salt. Beat until well mixed. Stir in nonpareils. The dough will be lumpy.

Pat the dough evenly into the prepared pan. Refrigerate the dough in the pan for about 10-15 minutes.

Then, use the parchment paper to lift the dough from the pan and cut the dough into 1/2-inch to 1-inch squares.

Finally, gently place the shortbread squares, 1/2 inch apart, on a cookie sheet lined with parchment paper. Bake the shortbread bites for 13-15 minutes or until the bottoms just begin to brown.

Keeping them in an airtight jar is a great way to store them and gift them to your sweethearts. Take them to work, school, or leave them on the kitchen counter to share with the ones you love. Ingredients

  • 1 cup salted butter, softened
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Red food coloring
  • 2/3 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt (optional)
  • 3 tablespoons Valentine’s nonpareils (typically red, pink, and white)

Instructions

  1. Preheat the oven to 325 degrees. Line an 8-inch square baking pan with parchment paper, leaving a 1-inch overhang and set aside.
  2. Combine the butter, almond extract, vanilla extract, and food coloring in a medium-sized bowl. Beat at medium-low speed with a hand mixer, scraping the bowl often, until creamy. Reduce speed to low; add the flour, sugar, and salt. Beat until well mixed. Stir in nonpareils. The dough will be lumpy.
  3. Pat the dough evenly into the prepared pan. Refrigerate the dough in the pan for about 10-15 minutes.
  4. Use the parchment paper to lift the dough from the pan and cut the dough into 1/2-inch to 1-inch squares.
  5. Gently place the shortbread squares, about 1/2 inch apart, on a cookie sheet lined with parchment paper. Bake the shortbread bites for 12-15 minutes or until bottoms just begin to brown.
