I was inspired to create a bourbon-infused whipped cream that elevates this dessert to a whole other level. Peaches and bourbon together are perfection!

Nothing Better Than a Sweet Peach in the Summer

Summer in the south… heat, humidity, thunderstorms, lightning bugs, porch swings, and peaches. It’s a beautiful time of year.

I have had the best peaches of my life in the last five years since we moved to North Carolina. I’m not sure what their secret is, but the south can grow the sweetest, juiciest, and most delicious peaches. I am smitten!

Every summer, I anxiously await the arrival of peaches at the market. I make weekly (okay, if I’m being honest it’s more like bi-weekly) trips to the farmer’s market to get baskets of fresh peaches. Lately, I’ve been cooking up a storm with them.

Treat Yourself with a Little Peach Cobbler

To date, this Peach Cobbler with Bourbon Cream is my favorite summer dessert. Although I created it as a dessert, no judgment will be passed should you decide to eat it for breakfast… It may or may not happen here all at the farmhouse. (Don’t worry your secret is safe with me!)

Peach Cobbler with Bourbon Cream

In the south, nothing says summer like fresh, sweet, juicy, peaches. Since moving to North Carolina, I've had some of the best peaches of my life. If only peach season lasted longer! Since it's fleeting, when it's here, I make the best of it. I love to grill peaches, make peach jams and glazes, but most of all, I love peach cobbler. Peaches and bourbon are a match made in heaven. My peach cobbler recipe celebrates their perfect union. Warm peach cobbler with cool, creamy bourbon cream and sprig of fresh mint is the perfect way to cap off a wonderful summer supper.

Ingredients

  • 6 fresh peaches, peeled and sliced
  • 1 large egg
  • 3/4 cup sugar
  • 3/4 cup all-purpose flour
  • 1/4 cup whole grain oats, plus a little more to sprinkle on top
  • 6 tablespoons butter, melted

Bourbon Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 2 tablespoons bourbon

Garnish

  • fresh mint springs

Instructions

  1. Preheat oven to 375 degrees.
  2. Place the sliced peaches in a lightly greased 8 inch square baking dish.
  3. Stir together egg, sugar, flour, melted butter, and oats in a medium bowl until mixture is combined.
  4. Sprinkle topping over peaches, sprinkling extra oats on top of that before putting cobbler into oven to bake.
  5. Bake at 375 degrees for 35 minutes or until top is golden brown and bubbly.
  6. Let cobbler sit for 15 minutes to cool. Serve warm with Bourbon Cream and garnish with a fresh mint sprig, if desired.
  7. For Bourbon Cream: Combine cream, sugar, and bourbon in a bowl. Whip with mixer on high until stiff peaks form.

Notes

You can also make individual cobblers for a fun summer dining presentation. Use 6-8 (8oz) ramekins. Bake them for the same amount of time on a foil-lined baking sheet.
