Looking for an easy, savory, and healthy chicken recipe?  This delicious Lemon Chicken checks all those boxes. It’s the perfect weeknight recipe. Deglazing the skillet with chicken broth, butter, and garlic make this sauce rich and flavorful. Lemon Chicken is just what you’re looking for when it comes to comfort food this time of the year. At the same time, the capers and lemon give a zesty and fresh nod to Spring which is just around the corner.

Delicious Lemon Chicken Recipe:

Lemon Chicken can be ready in about thirty minutes from start to finish. It’s perfect for busy nights yet the flavors are so complex and delicious that it can make a weekend meal special too. The golden encrusted chicken breasts and the sauce that is served with it are a match made in heaven. Lemon Chicken is sure to make the top of your “go-to” recipe list. 

Chicken thighs can also be used in lieu of chicken breasts. Follow the recipe directions as written. However, the cooking time for the chicken will be different depending on the thickness of the thighs. Use an instant-read thermometer to ensure that the ideal internal temperature for chicken (165 degrees) is reached before serving.  

How to serve Lemon Chicken:

There are many ways to serve Lemon Chicken. A few of my favorite ways to serve it is on top of a bed of angel hair pasta drizzled with some olive oil. It can also be served with a side of rice pilaf or over polenta. The sauce is so mouthwatering that it’s delicious with anything that soaks it up.

Lemon Chicken is the perfect easy and delicious weeknight recipe. Butter and garlic make the sauce rich and flavorful; just what you're looking for when it comes to comfort food this time of the year. At the same time, the capers and lemon provide a zesty and fresh nod to Spring. Serve it over a bed of angel hair pasta and enjoy!

Ingredients

  • 4-6 boneless, skinless, and thin-cut chicken breasts
  • Sea salt and freshly ground pepper
  • 2 eggs, whisked
  • All-purpose flour (for dredging) 
  • 6 tablespoons butter
  • 5 tablespoons extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3/4 cup chicken broth
  • 1 clove of garlic, minced
  • 1/4 cup brined capers, rinsed and drained
  • 2-3 tablespoons Mascarpone cheese (optional)
  • 1/3 cup fresh parsley, chopped
  • Lemon wedges for garnish

Instructions

  1. Season chicken with salt and pepper. Dredge chicken in egg wash and then flour, coating both sides thoroughly.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. when butter and oil start to sizzle, add chicken and cook for 3 minutes. When chicken is browned, flip and cook the other side for 3 minutes. Remove chicken from skillet and transfer to a plate. Continue cooking the remaining chicken the same way in batches until all are browned. Melt 2 more tablespoons of butter and add another 2 tablespoons of olive oil with each batch. Remove pan from heat once the chicken is browned on both sides and add chicken to the plate.
  3. Add the lemon juice, stock, garlic, and capers into the pan. Return the pan to the stove and bring it to a simmer, scraping up browned bits from the pan for extra flavor. Add salt and pepper to taste. Optional: If you're looking for a creamier sauce, swirl 2-3 tablespoons of Mascarpone cheese into the sauce.
  4. Return all the chicken to the pan and simmer for 5 minutes. Plate the chicken. Add 2 tablespoons of butter to the sauce and whisk vigorously. Pour sauce over the chicken and garnish with parsley and a lemon wedge.

Notes

I serve Lemon Chicken over a bed of angel hair pasta drizzled with olive oil. You can also serve it on top of polenta.
