So Much to Love About Comfort Food

The days are getting shorter, the air is getting cooler, and the leaves are starting to change. You know what that means… The season of comfort food has arrived. Yahoo! There is so much to love about the traditionally prepared food that evokes nostalgia and sentimental feelings within us all. 

Although I could list at least a dozen of my favorite comfort foods for you, I will refrain. However, I will say that on the top of my favorite comfort foods list is casseroles. There is something about the combination of delicious and fresh ingredients all baked together in one dish until it’s warm and bubbly. I love it! Oftentimes, casseroles include creamy cheese and a crispy topping. Toppings include, but are not limited to, pie crust, potatoes, corn flakes, chips, and crispy onions- just to name a few!) Is your mouth watering yet? I know mine is.

This recipe for Chicken Tater Tot Casserole checks all the boxes listed above when it comes to the best kind of comfort food. Also, the leftovers (if you have any) are fantastic the next day for lunch!

What You Need to Make Chicken Tater Tot Casserole 

I love recipes with ingredients that are typically staples in the pantry and refrigerator. It makes them that much easier. On any given week in Fall and Winter, I will have all the ingredients necessary to make Chicken Tater Tot Casserole in the farmhouse.

  • 10X7 baking dish
  • Chicken
  • Tater tots
  • Onion
  • Garlic powder
  • Salt
  • Pepper
  • Worcestershire sauce
  • Sour cream
  • Cheddar Cheese Soup
  • Cream of Chicken Soup
  • Broccoli 
  • Green beans

It’s no secret that I love to use rotisserie chicken in as many recipes as I can. It’s my favorite cheat! Rotisserie chicken is a great way to add chicken to a recipe that requires you to bake or boil it first before combining it with the rest of the ingredients. It’s a huge time saver, it’s healthy and it’s delicious. Win-win-win!

I also love all things crunchy! Therefore in this recipe, I always use Ore-Ida Extra Crispy Tater Tots. 

How to Make Chicken Tater Tot Casserole

Chicken Tater Tot Casserole could not be easier to make. First, saute the onions in a large skillet. Once, the onions are tender add the shredded rotisserie chicken and stir. Combine the spices with the chicken and onions, turn off the heat, and set that aside. Next, in a large bowl, mix together the Worcestershire sauce, sour cream, and soups creating a creamy (and delicious) sauce. Then, to the sauce, add the chicken, broccoli, and green beans. Stir to combine all the ingredients completely. 

Pour the chicken mixture in a prepared 10X7 baking dish sprayed with non-stick cooking spray. Top the chicken mixture with an even layer of tater tots and bake in the oven at 350 degrees for 50 minutes.  

 Substitutions and Tips for Chicken Tater Tot Casserole

Like most of my recipes, the ingredients are not set in stone. There are plenty of ways to make this recipe so it satisfies your family’s tastes and preferences while still keeping it delicious.

Substitutions:

  • Chicken – The chicken can be substituted for the same amount of ground beef. Even better, after Thanksgiving, you can substitute leftover turkey in this casserole.  It’s a delicious way to keep the flavors of Thanksgiving last a little while longer!
  • Soup – There are so many tasty creamy soups! Instead of using Cream of Chicken soup, you can also use Cream of Mushroom, Cream of Celery, or Cream of Onion. I do not, however,  suggest substituting the Cheddar Cheese soup. It is one of the ingredients that truly “makes” this recipe. You’ll want to stick with it.
  • Vegetables – If your family is not a fan of broccoli and/or green beans, consider substituting them for corn, peas, or carrots. Although you can use canned vegetables, I will always recommend using fresh veggies whenever possible. (I will concede to the use of frozen vegetables if you cannot find fresh ones.) 

Tips:

Do you love crispy toppings on your casseroles? If so, you may want to par-bake the tater tots in the oven for about 10 minutes before you assemble the casserole. Another option is turning the oven up to broil after you bake the casserole to brown the tater tots on top just a bit more creating a crispier topping.

Another delicious addition to Chicken Tater Tot Casserole is crispy shoestring onions. They add an extra layer of flavor that many people love.

This quick, easy, and delicious recipe is sure to become a family favorite. Even the kids will love it! 

Ingredients

  • 28 ounce package of frozen tater tots*
  • 1 rotisserie chicken, shredded (about 1-1.5 pounds)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup sour cream
  • 1- (10 3/4 oz) can condensed Cheddar Cheese soup
  • 1- (10 3/4 oz. can condensed can Cream of Chicken or Cream of Mushroom soup
  • 4-5 cups fresh broccoli florets
  • 2 cups fresh green beans, cut into 1-inch pieces
  • 1 bunch fresh parsley, chopped (optional)
  • Crispy shoestring onions (optional)

Instructions

  1. Preheat the oven to 350 degrees (Fahrenheit). Spray a 10X7 inch baking dish with non-stick cooking spray and set aside.
  2. In a large skillet on medium heat saute onion in olive oil. Once the onions are tender and translucent turn the heat off. Add the shredded chicken, garlic powder, salt, and pepper and stir to combine.
  3. In a large bowl, mix together Worcestershire sauce, sour cream, and both cans of soup.
  4. Add the chicken, broccoli, and green beans to the sauce. Stir to combine.
  5. Spread the chicken mixture into the prepared baking dish. Top with an even layer of tater tots and bake in the preheated oven for 50 minutes, until the tater tots are brown and the casserole is bubbling.
  6. Allow the casserole to cool for about 10 minutes before serving. Garnish with fresh chopped parsley.

Notes

* I use Ore-Ida Extra Crispy Tater Tots.

  • If you want the tater tots to be extra crunchy, you can pre-bake them for about 10 minutes before putting them on top of the casserole. Or, you can turn the oven up to broil after 50 minutes of baking and brown the tater tots under the broiler for about 5 minutes. Just be sure to watch that they don't burn.
  • The casserole is also delicious with crispy shoestring onions on top.
