Valentine’s Day=Love=Chocolate

IMG_8994I love any day that gives us a reason to remind those around us how much they are loved.

I know Valentine’s Day has become quite commercialized, but I have to admit, I do enjoy decorating the house with touches of red, pink and white and incorporating hearts here and there. I like having an excuse to give Mr. A and the kids little heart themed reminders of how much I love them throughout the day and I love any excuse to eat chocolate! Besides hugs and kisses (of course), I enjoy showing my family how much they are loved through cooking and baking for them, so for this reason alone, I’m all in on Valentine’s Day!

I know I have talked about how much it means to me to be able to bake now from scratch here on the farm. This is true! However, there are some recipes that are still tried and true in our family that involve the short cuts that I appreciated so very much when I was still working and didn’t have as much time to bake from scratch, the way I do now. One of my family’s all time favorite chocolate cake recipes is one that uses, wait for it… a boxed cake mix! I know…Shhhh! If you don’t tell, I wont. It is a double chocolate cake and I am telling you, you will need a tall glass of cold milk to go with a slice of this amazing cake because it is a chocolate lover’s dream. The best part… the recipe is fool proof. I don’t make anything that I cant count on 100% of the time and I certainly don’t share it if I can’t guarantee it. I am telling you now, this cake turns out perfect every time, it’s moist and delicious. It is also a traditional dessert in our family for Valentine’s Day. Honestly though, I will tell you that this cake is made more like monthly here at the farm… It’s THAT good!!!

For those of you with kids who like to bake, this recipe is a perfect beginner recipe. My kids make it all the time and they feel like pros every time they serve it. It’s very fun to see how proud they are of a cake that looks and tastes as wonderful as this one does! Double Chocolate Cake

Ingredients

1 box chocolate cake mix

1 cup sour cream

1 package Jell-o instant chocolate pudding mix (4 servings)

4 eggs

1/2 cup canola oil

1/2 cup water

1 package semi sweet chocolate chips

whipped cream or vanilla ice cream

berries (I typically use raspberries or strawberries)

Directions

Preheat oven to 350 degrees. Lightly grease a bundt pan. Beat all ingredients together in a large bowl with an electric mixer on low speed until moistened. Beat on medium speed for about 2 minutes scraping bowl occasionally and making sure all the lumps are gone. Pour batter into prepared bundt pan.

Bake cake for approximately 50 minutes to 1 hour or until a wooden toothpick inserted in the center comes out clean. Allow cake to cool for about 10 minutes in pan before removing cake and allowing it to cool completely on a wire rack.

Before serving, sprinkle cake with powered sugar. Serve with whipped cream or vanilla ice cream and berries of your choice.

    Meeghan speaks the truth! This cake is delicious! It was a favorite at our annual halloween carnival bake sale in california. It was Always the first cake to go.
